Electric Bleu: Where the Chicken Has a Passport and the Fries Speak French

Ah, Electric Bleu! The former home of Rustic Kitchen has been transformed into a très chic French bistro where the lighting is moody, the butter is salted with tears of joy, and the roast chicken could make even Julia Child whisper, “Mon dieu!”

At the helm is Chef Craig Hopson, a man with more culinary pedigree than a Parisian poodle. From Le Cirque in New York to Shirley Brasserie in Hollywood, this Aussie-born maestro has clearly mastered the art of le fancy poulet.

And speaking of chicken — let’s talk about Chicken Salt. It’s vegan. Oui, you read that correctly. Vegan Chicken Salt. Only the French (and apparently Australians) could pull off something so beautifully confusing. It’s salty, savory, and sprinkled with enough umami to make your taste buds break into a can-can.

While waiting for our table, we were greeted with complimentary champagne — because, obviously, hydration is important. The chef’s counter offers front-row seats to the culinary ballet happening in the kitchen, and honestly, it’s better than Netflix. If you can snag those seats, félicitations! You’ve won dinner.

We began with a baguette from Clark Street Bakery — crisp, chewy, and served with fleur de sel butter so divine it probably has its own guardian angel. Then came the Brentwood Corn Soup, a golden bowl of summer, crowned with crab-basil beignets (because why shouldn’t crab wear pastry as an accessory?).

But let’s not pretend we were here for the vegetables. The Roast Chicken arrived looking like it had just come off a Vogue cover shoot — golden, glistening, and accompanied by roasted potatoes bathed in a sauce so rich it probably owns a yacht.

We also sampled the Duck Breast with champagne grapes (because, of course, even the grapes are drinking here), Dauphine Potatoes with chive dip, and the now-famous Electric Fries with Chicken Salt, which I am convinced could end international conflict if properly distributed.

Dessert? Non. We were far too full — but like all tragic French romances, we’ll return for the sweet finale next time.
